This is where fine dining meets a gastropub experience.  The food options were unique and creative and most importantly delicious.  I increased my cholesterol levels significantly to be prepared to give a full review.  Therefore we began with three appetizers.  All were fabulous!  The bone marrow was the largest and most tasty that I had ever experienced anywhere.  It came with one of my favorite flavors I had throughout the entire meal, and that was a side dish of pulled pork mixed with marmalade.  Those flavors mixed together magically.  The next appetizer was their charcuterie in which we opted for three meats and two cheese options.  Apparently all of it came from the owner’s farm.  It certainly tasted fresh and full of flavor.  I enjoyed mixing and matching the meats and cheese on slices of toast and pouring on some honey.  It was superb!  The final appetizer was a grilled octopus and it did not disappoint either.  For the main course I had the hog chop, one of their signature dishes.  It was juicy and delectable.  If we weren’t gluttonous enough, we had a gelato sampler for dessert.  On top of that, Proof provides a complimentary cotton candy which is among the best I have ever experienced.

No good gastropub would be complete without a fine selection of beers.  Proof had an awesome selection of about fifteen craft beers.  There were about five that I had never even heard of which is rare for me so I tried four different ones that I had not ever seen before where I live.
 
Last, I highly recommend going to the bathroom.  I know that sounds weird, but trust me.  From the restaurant you must walk through a small art gallery to get to the bathroom.  There is a large digital screen that projects you right on to the screen.  My favorite part was the urinal in the men’s restroom.  It is a huge glass wall that you pee on to.  A motion sensor detects you and a waterfall of water gushes down soothingly while you do your business.  If that wasn’t wild enough, the glass wall that you are peeing on looks right into the hallway of the art gallery.  There were people just feet away from me that I could see perfectly well as you would through a glass window, but they could not see me because from the other side because it was a one way view.  Little did the people on the other side know what they were standing near.
